Swiss Ms. Mary Jane

This is a great balance of flavors for those early mornings!

You'll need

  • 3 eggs
  • 1 Tbsp butter
  • 1 Tbsp Infused Coconut Oil
  • 3 oz cremini mushrooms
  • 2 asparagus stalks, cut
  • 2 oz swiss
  • 1 oz caramelized onions

Let’s get cooking!

STEP 1

In an 8 inch non-stick pan add oil and heat on medium-high.

STEP 2

For the caramelized onions you will start by sauteing 1/4 of a yellow onion to the pan and after a minute season with a pinch of salt.

STEP 3

Now turn the heat down to medium low.

STEP 4

Cook for another 5-15 minutes depending on your preferred sweetness.

STEP 5

The longer that these onions cook the richer the sweetness gets. Be sure to keep the heat low and slow.

STEP 6

Give the pan a wipe with a paper towel and return to the stove at a medium HIGH heat.

STEP 7

It is time to cook the eggs.

STEP 8

Start by heating the oil in the pan and once hot, add your whipped eggs to the pan.

STEP 9

Set the base by moving the spatula side to side and scrapping the edges, this process should take less than a minute.

STEP 10

Layer remaining ingredients and fold in half. Enjoy!
