What a classic way to start your day. If you are lucky enough to have some pickles around they are nice on the side.
- 3 eggs
- 3 tsp butter
- 1 tsp Infused Olive Oil
- 2 oz prosciutto cotto
- 1 oz fontina
- Â½ tsp thyme
Let’s get cooking!
In an 8 inch non-stick pan add oil and set heat to medium-high.
Whip eggs and season with salt and pepper.
Pour in the whipped eggs and now is a great time to start forming the base with a rubber spatula by stirring the eggs in the pan and scrapping the sides down.
Once nice and level add remaining ingredients and fold in half.
Once folded allow to rest for a minute on each side in the pan so the ingredients heat through. Enjoy!
