Fresh Potato Salad

A great dish to make the night before and while you are testing out some of the cocktails for the bar. Roast, slice, Mary’nate, cover. Easy right!

You'll need

  • - 2 lbs Potatoes, mixed colors
  • - 1 pt Cherry Tomatoes, halved
  • - 1 oz Fresh Dill
  • - 4 scallions
  • - 4 oz Infused Olive Oil
  • - 4 bacon strips, cooked
  • - 2 oz Snap Peas, raw

Let’s get cooking!

STEP 1

In a saute pan heat Infused Olive Oil and blister tomatoes briefly.

STEP 2

Add potatoes and remaining ingredients (except dill) and heat until warmed thru.

STEP 3

Garnish with fresh dill.
