A great dish to make the night before and while you are testing out some of the cocktails for the bar. Roast, slice, Mary’nate, cover. Easy right!
- - 2 lbs Potatoes, mixed colors
- - 1 pt Cherry Tomatoes, halved
- - 1 oz Fresh Dill
- - 4 scallions
- - 4 oz Infused Olive Oil
- - 4 bacon strips, cooked
- - 2 oz Snap Peas, raw
Let’s get cooking!
In a saute pan heat Infused Olive Oil and blister tomatoes briefly.
Add potatoes and remaining ingredients (except dill) and heat until warmed thru.
Garnish with fresh dill.
